Say good morning to your new favorite breakfast – Espresso Overnight Oats! This simple breakfast is perfect because there is no cooking required, it is prepped in advance (!!), and it has coffee built right in.
1/2 cup oats
1/2 cup cashew milk (or milk of choice)
1 shot espresso
1 teaspoon maple syrup
1 Tablespoon chia seeds
1 Tablespoon Square Root nutnola butter
Combine all ingredients in a bowl or mason jar and mix (or shake!) to combine.
Store in the fridge overnight.
Serve with an extra drizzle of granola butter, fresh fruit, and granola!
If you do not have an espresso maker, sub out have of the cashew milk for iced coffee!
